Rolled Oat Flapjacks

These are my Original Oat Flapjacks. They are sugar and wheat free, packed full of nutritious goodness to keep your body fuelled!
Rolled oats are one of my favourite ingredients, just grind them down and you have yourself a perfect flour substitute that is 100% Wheat Free! Please see the recipe and instructions below.

Serves: 2
Ingredients:
1 ½ cups of dairy free milk of your choice
2 cups of ground rolled oats
2 teaspoons of baking powder
½ teaspoon of baking soda
½ teaspoon ground cinnamon
½ teaspoon of Himalayan salt
2 teaspoons vanilla extract
Optional toppings:
Cinnamon and coconut sugar/agave
Fresh fruit such as blueberries/ bananas/strawberries
Nut butter of your choice
Sugar free fruit jam
Method:
1. Measure out your 2 cups of rolled oats and blend them up until fine enough to act as a good flour substitute.
2. Add the rest of the dry ingredients to the ground rolled oats:
2 teaspoons of baking powder
½ teaspoon of baking soda
½ teaspoon ground cinnamon
½ teaspoon of Himalayan salt
3. Add in the 1 ½ cup of dairy free milk and 2 teaspoon of vanilla essence. Once mixed into a smooth thick pancake like batter, allow it to rest for 5 minutes.
4. Heat up your mixture on a non stick frying pan at a medium heat. (To test if the pan is hot enough add a few drops of water to the pan and if they move around quickly then you know you are ready to go) Its always best to use a good non stick frying pan as you can avoid using any oil.
5. Pour 1/3 of a cup of your mixture into the pan and cook for 1-2 minutes. Once the bubbles start to pop the flapjacks are ready to flip. Flip onto the other side and cook until they are a light golden brown. Serve with toppings of your choice and enjoy!
