Quick Vegan Cheese

This is a quick vegan cheese recipe that’s perfect for pizza, pasta and toasted cheese sandwiches. It is dairy free, soy free, nut free and oil free!
This is my favourite cheese recipe for putting on pizza, pasta and toasted sandwiches as it has that melting effect. This recipe actually happened by accident when I was short of ingredients to make other vegan cheese and I just threw together what I had available in the kitchen. It has a great, rich flavour with the smoked paprika and nutritional yeast. So if you are looking for a great pizza cheese, pasta cheese or toasted sandwich cheese then this recipe is great for just that. This recipe is also cost effective as it doesn’t require expensive nuts or culture to make. So let’s get started.
You will need:
A Pan
Mixing bowl
Measuring utensils such as teaspoon and tablespoon measurements
Cheese mould of square tupperware
Cooking Time: 15 minutes
Makes: About 200 grams of cheese.
Ingredients:
1 Tin Coconut milk or cream.
2 Tablespoons tapioca flour.
1 Teaspoon apple cider vinegar.
½ Teaspoon of smoked paprika.
2 Teaspoons nutritional yeast (can be found at most health stores).
½ Teaspoon of salt.
½ Teaspoon italian herbs.
2 Teaspoons of agar agar (optional) (can be found at most health stores).
2-3Tablespoons of water (if using agar agar).
Directions:
Get cheese mould/tupperware ready and oiled.
Mix the tapioca flour into the coconut milk and add the rest of the ingredients except for the agar agar and water.
Place the mixture into a pot and cook through on medium heat, stirring continuously until the mixture starts to become thick and begins to look like melted cheese.
If using agar agar while the cheese is cooking mix the agar agar with about 2-3 tablespoons of water.
Remove the pot from the stove and quickly stir in the agar agar mixture.
Place the mixture in a mould and leave it in the fridge to set for about 3-5 hours. If you want to use it right away that’s no problem, you just wont be able to grate it. You can just use a spoon to scoop it and spread it on your pizza, pasta or sandwich.
If you have not used agar agar I just take the cheese that is in the mould and place it in the freezer to form a hard block of cheese and allow it to thaw out for a few moments before grating it.
