Vegan Grilled Cheese Sandwich


This cheese has the perfect melted cheese texture. It's oil free, nut free, dairy free and gluten free.

When talking to people about transitioning into a vegan lifestyle they often say "but what about cheese" and "how can you live without cheese". I often have to explain the cruelty of the dairy industry to so many people as they are completely unaware of it.

Cheese is also known to be very addictive to humans, which is caused by the substance called Casine that is found in all dairy products. Casine has been found to trigger the brain’s opioid receptors which are linked to addiction. But that's enough about cheese, lets get down to making this delicious melted grilled vegan "cheese" toasted sandwich that will blow dairy cheese away!

You will need:

Griller or pan

Pot

Measuring cups and spoons

For the sandwiches:

  • 4-6 slices of bread

  • Sliced tomato(optional)

  • Caramelised onions(optional)

Ingredients:

For the cheese :

  • 1 boiled potato (with or without the skin)

  • 1 boiled carrot (with or without the skin)

  • 1/2 cup of water

  • 1 Teaspoon of garlic

  • 1 Tablespoon apple cider vinegar

  • 2 Tablespoons lemon juice

  • 2 Tablespoons tapioca flour

  • 3 Tablespoons nutritional yeast

  • 1/2 teaspoon mustard powder

  • Salt and pepper

Directions:

  1. Blend all of the ingredients in a high speed blender until smooth.

  2. Transfer mixture over to a pot and cook on medium heat until the mixture becomes thick and melted cheese like.

  3. Once the cheese has cooked place a tablespoon of the cheese and spread onto the bread. Top the cheese off with some slices of tomato and caramelised onions. Close the sandwich and place in toaster or on a pan on medium heat and toast until golden brown. Serve with your favourite side salad or chips and enjoy!
