Hello and thank you so much for visiting Health Alignment! I'm very excited to share this recipe with you after spending much time and many attempts at making the perfect apple muffins. I've always loved baking and creating new recipes while making short cuts for delicious treats that would usually take hours to make. These Apple Cinnamon Muffins are delightfully scrumptious with just the right amount of sweetness. These dainty muffins are fluffy, light and make for a heavenly tea time snack. They have a rich apple taste with a hint of cinnamon. These charming little muffins leave your kitchen smelling so flavourful and you are bound to enchant anyone that tastes them. Without further adieu, here's what you are going to need to make these treats.
You will need:
Mixing bowl
Measuring spoons and cups
Muffin baking tray
Mixing spoon
Sieve
25 minutes
Makes 9 muffins
Ingredients:
2 Small green apples
1 Teaspoon of cinnamon and more for sprinkling
2 Tablespoons of all purpose flour (I used stoneground cake flour)
1 Teaspoon of sugar of your choice (use xylitol for a sugar free option)
1 Cup of all purpose flour
1/3 Of a cup of melted coconut oil
1/2 Cup of sugar of your choice
2 Teaspoon of baking powder
1/2 Teaspoon of baking soda
125ml of apple purity
1 Smashed banana
1 Teaspoon of vanilla essence
1/8 of a teaspoon of mixed spice
1/2 Cup of plant based milk
Pinch of salt
Directions:
Preheat oven to 180°C and greece muffin tray.
Remove the skin of the apples and dice the into small squares.
In a mixing bowl mix the apple squares, 2 tablespoons of flour, 1 teaspoon of sugar and cinnamon.
In a separate mixing bowl sieve the dry ingredients and mix well.
Add the wet ingredients to the dry ingredients and mix well.
Add the apple mix to the mixing bowl and stir in.
Place 1 heaped tablespoon of the mixture into each muffin dish. Sprinkle some more cinnamon and sugar on the top and place in the oven to bake for 18-20 minutes.
