Hello and Thank you so much for visiting Heal Alignment. I love simple recipes that don't require any fancy ingredients and this is just one of those. This recipe won't take you longer then 20 minutes to whip up. These are great for kids and perfect quick snack time. You can add toppings as well from sweet maple cinnamon drizzled on top to fresh salsa and guacamole. This is a delicious cost effective recipe that results in a quick scrumptious breakfast or snack.
For this recipe you are going to need:
A mixing bowl
Measuring cups and spoons
1 Tin of Sweet corn
1 Cup of all purpose flour( I used stoneground cake flour)
1 Teaspoon of baking powder
1/2 Teaspoon of baking soda
Pinch of salt
Sieve all of your dry ingredients.
Add the sweetcorn to the dry ingredients and mix well.
Heat your pan with a bit of coconut oil on the stove at medium heat.
Place a heaped tablespoon into the pan and spread the mixture slightly.
Cook each fritter for about 3-5 minutes each side until the bubbles start to form and pop.Flip the fritter over and cook a further 3-5 minutes ensuring the mixture in thoroughly cooked through.
