Superfood Bars

Hello and welcome to Health Alignment. I've been waiting so long to share this super easy, quick and simple superfood bar recipe with you guys as its one of my favourite recipes. These bars are a staple in our home. I started making these types of bars when I realised that there's no need to buy prepackaged snack bars like these from the grocery stores when I can make them at home the way I really like them. These are delicious, healthy, have no preservatives and make for the perfect quick breakfast or snack on the go. This is a great cost effect recipe that the whole family can enjoy.

You are going to need:
Food processor
8x8 square pan
Measuring cups and spoons
This makes roughly about 16 bars
Ingredients:
2 Cups rolled or jungle oats
1/2 Cup cranberries or goji berries
1/3 Cup of Almonds or your favourite Nut (if you have a nut allergy use pumpkin seeds or sunflower seeds)
1 Cup pitted dates
1/2 Cup boiling water
1 Tablespoon Caramel or Vanilla essence
150 g Peanut butter (use Tahini for a nut-free option)
Pinch of salt
Directions:
Soak your dates in the boiling water for about 10 minutes.
In the food processor place your oats and pulse in the blender until they have slightly broken down.
Add the cranberries and almonds and blend until they are broken down into the oats.
Add the peanut butter, soaked dates and caramel or vanilla essence.
Blend until the mixture is well combined and starts to form a large ball.
Line your dish with a dash of oil to stop the bars from sticking.
Scoop mixture into the 8x8 square pan and press evenly into the pan with your hands or a flat-bottomed glass. Cut the squares into about 16 bars. Place in the fridge to set for about 2 hours.
