Savoury Breakfast Waffles


Hello and thank you for visiting our Blog. These savoury waffles are packed full of many key nutrients such as chia seeds, so this makes a great, healthy and wholesome meal. They are great for those that like to start their day on a savoury note and leave you feeling full and satisfied to get through your mornings. These are really so flavourful and easy to make, you can top them any way you like but I've listed my favourite way down below but just to give you some more ideas...They are great with some sautéd mushrooms and garlic and well as with chic peas and coconut cream. Lets get started!

You are going to need:

  • A blender to grind down the rolled oats

  • A mixing bowl

  • Measuring cups and spoons

  • Waffle machine

  • Time: 15-20 minutes for the waffles

Ingredients for waffle mix:

  • 1/2 Cup of rolled oats ground to flour consistency or a Gluten Free flour of choice such as brown rice flour or buckwheat flour

  • 1/2 Cup of chic pea flour

  • 1 Teaspoon of baking powder

  • 1 Tablespoon of chia seeds

  • Pinch of salt

  • 1/2 Cup of water

Directions: Waffle Mix

  1. Ground down your oats in a blender until smooth.

  2. In a mixing bowl mix the flours, salt, baking powder and chia seeds together.

  3. Stir in the 1/2 cup of water and mix until well combined

  4. Allow the batter to rest for about 5 to 10 minutes until it has thickened.

  5. Place 1/4 of a cup of the batter in your waffle machine and cook until slightly golden.

Ingredients for Bean Balls:

  • 1 Teaspoon of coconut oil

  • 1/2 Onion

  • 1/2 Teaspoon of crushed garlic

  • 1 Cup of cooked lentils

  • 1/4 Teaspoon each of Italian herbs, sage and smoked paprika

  • 1 Tablespoon on tomato paste

  • 1 Tablespoon chia seeds + 3 tablespoons of water

For the sauce:

  • 1/2 Onion sliced

  • 1/2 Teaspoon of crushed garlic

  • 1 Teaspoon of coconut oil

  • 1 Tablespoons on tomato paste

  • 1 Tablespoon of balsamic vinegar

  • 1/4 Teaspoon of Italian herbs, sage and smoked paprika

  • 1/2 Tin of tomatoes

  • 1 Smashed avocado with a pinch of salt and pepper.

Directions: For the Bean Balls

  1. Preheat oven to 180°C

  2. Mix the chia seeds and water and leave to set aside.

  3. Sauté the onions in the coconut oil on medium heat. Add the garlic and cook for a further minute.

  4. In a food processor add the rest of the ingredients including the chia seed mix and the cooked onions.

  5. Pulse until combined but not too fine.

  6. Line a baking tray and form each meat ball with about a tablespoon of the mix.

  7. Bake at 180°C for about 30 minutes. While the 'meat balls' are cooking you can start on the sauce.

Directions for the sauce:

  1. Sauté the onions in the coconut oil on medium heat. Cook until soft and add the garlic.

  2. Add the tomato paste and balsamic and cook for a further minute.

  3. Add the rest of the spices and stir until well combined. Add the tinned tomatoes and simmer for about 2 minutes.

  4. Start cooking the waffles in your waffle machine.

  5. Once the meat balls have cooked remove from oven.

Plating:

Place a waffle on a plate, place about 1 tablespoon of tomato sauce mix onto of the waffle. Top with the smashed avocado and place a bean ball on top of the avocado and enjoy.
