The easiest raw meal there ever was.
Nut free option
1/2 yellow pepper
1/2 red pepper
1/2 small green chilli
3 pitted dates
4-6 crisp lettuce leaves
Peanut Sauce (contains nuts)
1 heaped teaspoon peanut butter
juice of 1 lime
2 tablespoons of water
1 teaspoon soy sauce or coconut amino/brags or just sub for more lemon juice
Tahini dressing (nut free)
2 Tablespoons of tahini
1 Tablespoon of soya sauce or coconut amino/brags or just sub for more lemon juice
1 Teaspoon of sweetener such as maple syrup of agave
3 Tablespoons of lemon juice
1-2 Tablespoons of warm water
Start with your peanut or tahini sauce. Mix all of the ingredients together util creamy. Adjust flavour and consistency if your prefer your sauce thin add some more liquid.
Slice up all your filings.
Arrange your lettuce cups on your plate and place the fillings inside. Drizzle the sauce on top or leave it on the side and enjoy.
