Vegan Crumpets

One of the quickest, easiest vegan breakfast or snack recipe.
You will need:
Mixing bowl
Non stick pan
Measuring cups and spoons
Spatula
Ingredients:
1 cup of all purpose flour
1 teaspoon of yeast
1/2 teaspoon baking soda
Pinch of sugar
Pinch of salt
1 teaspoon vanilla essence or extract
1 cup of luke warm water
Directions:
Mix together all of your dry ingredients. Add the water half at a time and mix until smooth.
Leave in warm sunny spot covered to rise for 20-30 minutes.
Heat up your nonstick pan or oiled pan on medium heat.
Place a 1/4 cup of the mixture in the pan and cook until bubbles form and start to pop.(see below image)
Flip and cook for another minute or so until slightly golden.
Serve with your favourite sauces and fruits.
