Vegan Quesadilla with Vegan "Mozzarella"

Quick,simple delicious lunch or dinner.

Ingredients :

  • Plain vegan tortilla wraps

For the filling

  • 2 Tablespoon of tomato paste

  • 2 Cups of veggie mince or refried beans

  • 2 Onions diced (Red or White)

  • 1 teaspoon of crushed garlic

  • 1 tablespoon of balsamic vinegar

  • 1 teaspoon of smoked paprika

  • 1 teaspoon of vegetable stock

  • salt and pepper to taste

For the vegan mozzarella:

  • 1 Tin of coconut cream

  • 2 tablespoons of lemon juice

  • 1 Tablespoon of nutritional yeast

  • 1/2 teaspoon mustard powder

  • salt and pepper to taste

  • 2 tablespoons of tapioca flour

Directions:

  1. Sauté the onions in a pan on medium heat in some water or oil until soft. Add in the balsamic vinegar and cook until the onions are caramelised. Remove the onions from the pan and place in a side dish.

  2. Fry your veggie mince such as the Fry's Family Mince with the garlic and tomato paste. Add the smoked paprika and vegetable stock. If you are using beans do the same. Once the mince has cooked you can start with the cheese

Directions for the :Vegan mozzarella:

  1. In a pot mix together all of the ingredients util everything is smooth.

  2. Place the pot on the stove at medium heat and continue to stir the mixture until it thickens and starts to look like thick melted cheese.Taste to make sure the tapioca flour has cooked through and does not have a flour taste or texture. Remove from heat.

Directions for Quesadilla:

  1. Spread 1 heaped tablespoon of the vegan mozzarella on the one side of the tortilla evenly.

  2. Place about 2 tablespoons of the veggie mince or bean mixture on top of the vegan mozzarella.

  3. Finally add some of the caramelised onions.

  4. Fold the tortilla in half like a half circle and place in your toaster or in a pan on the stove on medium to low heat.

  5. Once the tortilla starts to go golden brown it is ready.

  6. Serve with fresh guacamole, salsa and coriander.
