Vegan Speculaas Biscuits

These are my ultimate favourite childhood cookies.

Utensils:

Baking trays

Mixing bowl

Cups and spoons measuring

Oven

Time:45 minutes to make a couple of batches on the baking tray. Makes about 30-40 biscuits depending on your cutters.

Ingredients:

  • 2 cups of all purpose flour

  • 1 cup of sugar of choice

  • 1 teaspoon of baking soda

  • 2 Tablespoons of cinnamon

  • 1/2 teaspoon of mixed spice

  • 1/4 of a teaspoon of ginger

  • 1/4 of a teaspoon of aniseed

  • 1/4 of a teaspoon of cloves

  • pinch of salt and black pepper

  • 1/2 cup of oil of your choice

  • 1/2 cup of water

  • 1/2 a teaspoon of vanilla essence

Directions:

  1. Preheat oven to 180°C.

  2. Mix all of your dry ingredients.

  3. Add the wet ingredients and mix until a dough forms.

  4. Roll out 1/2 of the dough about 3-5mm thick on a well-floured surface.

  5. Use cookie cutters to cut out your favourite shapes. If you don't have any no worries just use the top of a glass.

  6. Place the cut-out cookies on an oiled or floured baking tray and bake for about 12-15 minutes until slightly golden. Repeat this process until all of your dough is finished.

  7. Allow to cool and enjoy with your favourite warm drink.

  8. Ps. these are perfect dunking cookies.
