Vegan Speculaas Biscuits

These are my ultimate favourite childhood cookies.
Utensils:
Baking trays
Mixing bowl
Cups and spoons measuring
Oven
Time:45 minutes to make a couple of batches on the baking tray. Makes about 30-40 biscuits depending on your cutters.
Ingredients:
2 cups of all purpose flour
1 cup of sugar of choice
1 teaspoon of baking soda
2 Tablespoons of cinnamon
1/2 teaspoon of mixed spice
1/4 of a teaspoon of ginger
1/4 of a teaspoon of aniseed
1/4 of a teaspoon of cloves
pinch of salt and black pepper
1/2 cup of oil of your choice
1/2 cup of water
1/2 a teaspoon of vanilla essence
Directions:
Preheat oven to 180°C.
Mix all of your dry ingredients.
Add the wet ingredients and mix until a dough forms.
Roll out 1/2 of the dough about 3-5mm thick on a well-floured surface.
Use cookie cutters to cut out your favourite shapes. If you don't have any no worries just use the top of a glass.
Place the cut-out cookies on an oiled or floured baking tray and bake for about 12-15 minutes until slightly golden. Repeat this process until all of your dough is finished.
Allow to cool and enjoy with your favourite warm drink.
