Savoury Christmas Pie

This Pie is bursting with Christmas flavours and is so easy to make!
You Will Need:
Food Processor
Mixing bowl
Measuring cups and spoons
Baking tray
Prep:10 Minutes
Baking time 35-45 minutes
Ingredients:
A Tin of chickpeas
250g Spinach
½ an onion finely diced
50g of sunflower seeds or your favourite nuts toasted
½ a teaspoon of nutmeg
2 teaspoons of garlic
Zest of 1 lemon
1 teaspoon of chives
1 tablespoon of cranberries
½ a teaspoon of cumin
salt and pepper to taste
2 tablespoons of fresh rosemary sprigs(for garnish)
1 tablespoon of milk of your choice
1 tablespoon of olive oil
1 packet of vegan puff pastry (found at most pick n pays, Spars, Woolworths)
Directions:
Preheat your oven to 180°C.
Roughly chop your spinach.
Place the spinach in a colander and pour boiling hot water over until it has wilted. Allow to cool and shake until most of the moisture it out.
Place the spinach in a bowl and mix in the onions, toasted sunflower seeds, spices and lemon zest as well as the cranberries. Combine generously until all the spices are mixed through.
Transfer into your food processor and add in the drained tin of chickpeas. Pulse for a few moments until the chic peas have slightly broken down. If you don’t have a food just mash the chickpeas slightly in a separate bowl and mix into the spinach and spice mix.
On a clean, well-floured surface roll out your pastry into a 20 x 35-40 cm rectangle.
Spoon the mixture along the length of the pastry leave a 1-2 cm gap at both the short ends of the rectangle.
Fold in the short ends of the pastry to prevent any filling escaping and roll the pastry closed to form long sausage type shape.
Place the Pie on a well-oiled baking tray in a horseshoe shape.
Using a knife, slice small incisions along the top of the pastry.
In a small dish mix the olive oil and milk together. Brush the top of the pastry off and place the pie in the oven to bake for roughly 35045 minutes until golden brown
Once cooked, Remove from oven and allow to cool for a few moments. Garnish with some fresh rosemary and dried cranberries.
You can easily prep this pie a day in advance and just pop it into the oven on the day.
