Creamy Basil & Avocado Cold Pasta

This Creamy Pasta is perfect for a hot summers day.
You will need:
Pot
Pan
Blender
Measuring cups and spoons
Bowl
Time:25-30 minutes
Serves 6-8 people
Ingredients:
2 ripe avocados
1 small handful of basil
5 Tablespoons of lemon juice
2 tablespoons olive oil (or water)
Salt and pepper to taste
4-6 Tablespoons of coconut cream
6 tablespoons water
1/2 tsp sweetener such as maple syrup/agave
1/4 cup of almonds pan roasted
450g of your favourite pasta
8 small tomatoes
a few extra sprigs of basil for garnish.
Directions:
Place your pasta on the stove to cook following the instructions on the packaging.
While your pasta is cooking, start with your creamy basil avocado sauce.
Place all of your ingredients except for the almonds into a blender and blend until thick and creamy.
Once your pasta has cooked, drain it and allow the pasta to cool for about 5 minutes in cold water.
Once the pasta has cooled, place into a bowl and stir through the pasta sauce.
Place the bowl in the fridge. Start toasting the almonds slightly in a pan on medium heat until slightly brown.
Remove the pasta salad from the fridge.
Slice up your tomatoes and dish up your portions of pasta salad. Garnish with the tomato slices, roasted almonds and a few extra leaves of basil.
