Mini Vegan Quiches that are gluten free and oil free. Packed with goodness! 🌱🌱🌱
Time 30 minutes
Makes 9 mini quiches
1/2 an onion finally chopped.
1 handful of spinach finally chopped.
2 baby marrows finally chopped.
1/2 red pepper finally chopped.
1 cup of chickpea flour.
1 tablespoon of nutritional yeast.
Generous grind of salt and pepper.
2 teaspoons of baking powder .
1/2 teaspoon of kala namak salt.
Sprinkle of cayenne pepper for the top .
Preheat oven to 180°C.
Mix together all your veggies. Add in the chickpea flour, spices and baking powder . Add in the water and mix until well combined.
Place 1 and 1/2 tablespoons into each oiled muffin dish. Bake for 20-25 minutes.
