Mini Vegan Quiches


Mini Vegan Quiches that are gluten free and oil free. Packed with goodness! 🌱🌱🌱

Time 30 minutes

Makes 9 mini quiches

Ingredients:

  • 1/2 an onion finally chopped.

  • 1 handful of spinach finally chopped.

  • 2 baby marrows finally chopped.

  • 1/2 red pepper finally chopped.

  • 1 cup of chickpea flour.

  • 1 tablespoon of nutritional yeast.

  • Generous grind of salt and pepper.

  • 2 teaspoons of baking powder .

  • 1/2 teaspoon of kala namak salt.

  • Sprinkle of cayenne pepper for the top .

Directions :

  1. Preheat oven to 180°C.

  2. Mix together all your veggies. Add in the chickpea flour, spices and baking powder . Add in the water and mix until well combined.

  3. Place 1 and 1/2 tablespoons into each oiled muffin dish. Bake for 20-25 minutes.
