Carrot Cake With Cream Cheese Frosting
Carrot cake 🍰 my absolute favourite type of cake. I made this one using Tofutti brands which can be found at Food Lovers Market Dry ingredients:
3 medium sized carrots grated
1 &1/2 cups of flour of your choice
2/3 cup of sugar of your choice
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon mixed spice
A dash of ground cloves
Pinch of salt
1/2 cup of oil of your choice
1 teaspoon of vanilla extract
125ml apple sauce or apple purity
125 ml water
Preheat oven to 180°C.
Mix all your dry ingredients.
Add in your wet ingredients.
Pour into cake tin and bake for 35-45 minutes.
For the cream cheese icing:
1 tub of plain Toffutti vegan cheese
1/2 a cup of powdered sugar such as icing sugar
1-2 teaspoons of fresh lemon juice
Place all your ingredients into a mixing bowl and mix with a beater or by hand until creamy.
Place in the fridge to cool while your cake finishes cooking.
Make sure your carrot cake is completely cool before icing.
