Carrot Cake With Cream Cheese Frosting


Carrot cake 🍰 my absolute favourite type of cake. I made this one using Tofutti brands which can be found at Food Lovers Market Dry ingredients:

  • 3 medium sized carrots grated

  • 1 &1/2 cups of flour of your choice

  • 2/3 cup of sugar of your choice

  • 2 teaspoons baking powder

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon mixed spice

  • A dash of ground cloves

  • Pinch of salt

Wet ingredients:

  • 1/2 cup of oil of your choice

  • 1 teaspoon of vanilla extract

  • 125ml apple sauce or apple purity

  • 125 ml water

Directions:

  1. Preheat oven to 180°C.

  2. Mix all your dry ingredients.

  3. Add in your wet ingredients.

  4. Pour into cake tin and bake for 35-45 minutes.

For the cream cheese icing:

  • 1 tub of plain Toffutti vegan cheese

  • 1/2 a cup of powdered sugar such as icing sugar

  • 1-2 teaspoons of fresh lemon juice

Directions

  • Place all your ingredients into a mixing bowl and mix with a beater or by hand until creamy.

  • Place in the fridge to cool while your cake finishes cooking.

  • Make sure your carrot cake is completely cool before icing.
