Chocolate Oat Muffins



  • 1 cup ground oats

  • 3 tablespoons of sugar

  • 1/4 cup of cocoa powder

  • 2 tablespoons of raw cocoa nibs or vegan choc nibs(optional)

  • 2 teaspoons baking powder

  • Pinch of salt


  • 1/2 a cup of cooler coffee

  • 2 mashed bananas

  • 1 teaspoon of vanilla essence

  • 2/3 cup of water or oil


  1. Preheat oven to 180°C

  2. Mix together all your dry ingredients

  3. Add in wet ingredients and mix until well combined.

  4. Spoon into oiled muffin tray.

  5. Bake at 180°C for 20-30 minutes

  6. Sprinkle with icing sugar or 3 ingredient chocolate sauce(recipe below)
