One Pot Mac & Cheese

One Pot Mac n Cheese, quick and easy!

You will need:

  • Pot

  • Pan

  • Sharp Knife

  • Measuring spoons

  • 20-25 minutes

  • Serves 4

Ingredients:

  • 2 Onions diced

  • 1 teaspoon of coconut oil or sub for water

  • 1/2 teaspoon of Italian herbs

  • 1/2 teaspoon of Marmite spread

  • 1/2 teaspoon of your favourite mustard(I used English)

  • 1 Teaspoon of Tahini

  • 1 Can of coconut cream or milk

  • 2 Tablespoons of lemon juice

  • salt and pepper to taste

  • 1 heaped teaspoon of tapioca flour or corn flour

  • 1/4 cup of water

  • 1 handful of small cherry tomatoes

  • 1/2 packet of your favourite pasta

Directions:


  1. Place your pasta in the pot and cook according to the package instructions.

  2. Heat up the oil in your pan on medium to high heat. Add the onion and fry until golden.

  3. Once your onions have cooked remove from the heat.

  4. Place the onions, seasonings, coconut cream, Marmite, mustard, tahini and lemon juice in a blender and blend until smooth.

  5. Once your pasta has cooked, strain the pasta and leave to rest in the colander while you use the pot to make the cheese sauce.

  6. Place the cheese sauce in the pot on medium to high heat. Bring to boil. Mix the water with the tapioca flour and add to the cheese sauce. Turn the heat down and cook the sauce until it thickens.

  7. Add the pasta to the pot with the cheese sauce and stir the sauce through the pasta.

  8. Place your cherry tomatoes on-top( you can fry them if you want using the pan for the onions).

  9. Sprinkle with some more Italian herbs and salt and pepper to taste and enjoy!
