This savoury quick lunch bowl is easy to put together!
What you will need:
For the bowl:
1/2 a cup of cooked wild brown rice
1/2 a cup of boiled veggies or roasted( I used green beans, carrots, baby marrows, onions & corn)
1 Handful of baby spinach
Small handful of cherry tomatoes
For The Creamy Green Tahini Dressing:
6 Tablespoons of water
2 Tablespoons of lemon juice
2 Tablespoons of tahini
4 Pitted dates
1 Tablespoon of low sodium soy sauce
Salt and pepper to taste
A small handful of spinach
Cook your brown rice if you haven't already prepared it.
Blanch your veggies and boil for 3-5 minutes until desired texture.
While your veggies are cooking prepare your green tahini dressing.
Place all the ingredients into a blender and blend until smooth. Add more water if desired.
Place your rice in your bowl and dish in your veggies and baby spinach. Drizzle your tahini dressing on and enjoy!
