Quick and easy breakfast or tea time muffins!
You will need:
Measuring cups and spoons
Total time 30-35 minutes
Makes 9-12 medium muffins
2 cups of oat flour(ground oats)
2/3 cup sugar such as coconut or brown sugar
11/2 teal baking powder
Pinch of salt
2/3 cup of mixed berries(fresh or dried)
1/2 cup of apple purity
1/4 teaspoon vanilla bean powder or 1 teaspoon vanilla essence
1/4 cup of fresh orange juice
1/2 cup of water
Preheat oven to 180°C.
Ground down your oats in a blender until smooth flour-like texture.
In your mixing bowl mix in all the dry ingredients including the berries.
Add in the wet ingredients and mix until well combined.
Pour into your well-oiled muffin tray and bake for 20-25 minutes.
