Mixed Berry Oat Muffins



Quick and easy breakfast or tea time muffins!

You will need:

  • Mixing bowl

  • Measuring cups and spoons

  • Muffin tray

  • Prep 5-10minutes

  • Total time 30-35 minutes

  • Makes 9-12 medium muffins

Ingredients:

  • 2 cups of oat flour(ground oats)

  • 2/3 cup sugar such as coconut or brown sugar

  • 11/2 teal baking powder

  • Pinch of salt

  • 2/3 cup of mixed berries(fresh or dried)

  • 1/2 cup of apple purity

  • 1/4 teaspoon vanilla bean powder or 1 teaspoon vanilla essence

  • 1/4 cup of fresh orange juice

  • 1/2 cup of water

Directions:

  1. Preheat oven to 180°C.

  2. Ground down your oats in a blender until smooth flour-like texture.

  3. In your mixing bowl mix in all the dry ingredients including the berries.

  4. Add in the wet ingredients and mix until well combined.

  5. Pour into your well-oiled muffin tray and bake for 20-25 minutes.
