Vegan Chocolate Coffee & Vanilla Bean Mini Cheesecake Cups

Does anyone else love the combination of chocolate and coffee? These chocolate coffee and vanilla bean mini cheese cakes are perfect for just that treat! 🌱Not to mention they are gluten free, oil free, nut free, seed free and refined sugar free!

You will need:

  • Blender

  • Mini cups or or glasses

  • Prep 15 minutes

  • Total time 2 hours 15 minutes

  • Makes 3-4 mini cups

Ingredients

Vanilla Bean Layer:

  • 1 & 1/2 cups of cooked butter beans drained and rinsed(can be tinned)

  • 2/3 Cup of plant-based milk

  • 3 teaspoons xylitol or sweetener of your choice

  • 1 teaspoons vanilla bean powder or extract

Coffee and Cocoa layer:

  • 2 tablespoon Cocoa powder

  • 1/2 cup of plant-based milk

  • 1 teaspoon vanilla powder or extract

  • 2-3tablespoons xylitol or sweetener of choice

  • 1 teaspoon of your favourite ground coffee

  • 1 & 1/2 cups of cooked butter beans drained and rinsed(can be tinned)

Directions:

  1. Start with your vanilla layer.

  2. Place all of your ingredients into a blender and blend until smooth.

  3. Pour the mixture until half your mini cups are full. Place in the fridge while you start the next layer.

  4. Place all your ingredients for the coffee and cocoa layer into a blender and blend until smooth.

  5. Pour the chocolate layer to fill up the cups.(see images below)

  6. Place in the fridge to set for about 2 hours and enjoy!
