You will need:
Measuring cups and spoons
Total time 30-35 minutes
Makes 9-12 medium muffins
1 1/2 cups oats
1/2 cup sugar of your choice ( I used Xylitol)
11/2 teal baking powder
Pinch of salt
70 g poppy seeds
3 tablespoons apple purity
1/4 teaspoon vanilla bean powder
3 tablespoons fresh lemon juice
Zest of half a lemon
1/2 cup of water
Preheat oven to 180°C.
Blend your oats until they are fine. Mix together all of the dry ingredients.
Add in the wet ingredients and mix until well combined.
Pour into a well-oiled muffin tray and place in the oven to bake for 20-30minutes until slightly golden.
