Simple 25 Minute Tomato Vegan Pasta



Its #HungerMonthSA at Food Lovers Market again.This is a delicious comforting pasta dish that is perfect for a family lunch or dinner with no fancy ingredients required. I've teamed up with Food Lovers Market to create this simple dish so head down to the nearest FLM in support of World Hunger Month to get all the cheap and simple ingredients needed. You will need:

  • Pot

  • Pan

  • Measuring Cups and spoons

  • Cutting board

  • 25 minutes

  • Serves:6

Ingredients:

  • 500g of tortiglioni pasta or any other pasta

Pasta sauce:

  • 2 teaspoons of FLM crushed garlic and chilli

  • 1 tablespoon of oil of your choice

  • 2 small onions diced

  • 1 green pepper diced

  • 2x tins of Earth Wise tomato and basil mix

  • 1 tin FLM tomato and onion mix

  • 1 small tin of tomato paste

  • 3 tablespoons of sugar

  • 1 small handful of fresh coriander chopped and more for garnishing

  • A packet of black FLM olives(optional)

Directions:

  1. Place the pasta on the stove to cook following instructions on the packaging

  2. Heat up 1 tablespoon of oil in a pan on medium to high heat.

  3. Add in the crushed garlic and chilli and cook for 2 minutes. Start chopping up your onions and pepper while the garlic cooks.

  4. Mix in the onion and green pepper to the crushed garlic and cook for a further 2 minutes until all the flavours are released.

  5. Add in all the tins and cook for 5 minutes.

  6. Mix in the sugar and fresh coriander and continue to cook for a further 5 minutes.

  7. Once your pasta is cooked, remove the pot from the stove and strain the water.

  8. Dish up your portion of pasta and top with a good serving of the pasta sauce. Top the dish with some black olives and fresh coriander.
