A Whole Vegan Mince Pie


This Vegan mince pie is so quick and easy to make!



Mince pie

Crust:

  • 2 cups of all-purpose flour

  • 1 cup of xylitol

  • 1 cup of coconut oil slightly melted

  • Pinch of salt



Filling:

  • 1 jar of store brought mince meat mix



Directions:

  1. Preheat your oven to 180°C.

  2. In your mixing bowl, mix all the dry ingredients.

  3. Add in the wet ingredients and mix until a dough forms.

  4. Divide the dough into two and roll out the first half to fit the bottom of your pie dish to form the crust.

  5. Place the crust in the oven to blind bake for 10 minutes while you roll out the remaining dough.

  6. Using a cookie cutter of whatever shape you like, cut up the remaining dough.

  7. Once the crust has finished blind baking, remove it from the oven and spread the mincemeat in evenly.

  8. Place the cut out shapes of dough to form the top crust of the pie.

  9. Place back in the oven to bake for a further 15 minutes until the top crust is slightly golden.

  10. Sprinkle with icing sugar and enjoy.
