I am loving playing around with pies and tarts at the moment 🍃
I made these two little pies today and filled them with fresh apple and pear slices 🌿I’ll share the recipe here quick in case you want to save this for later 🌱
For the pie pastry:
1 1/2 cups of all-purpose flour
1/2 a cup of coconut sugar
1/2 teaspoon of cinnamon
1/2 teaspoon mixed spice
Pinch of salt
1/2 a cup of coconut oil softened
1/2 a cup of water
For the filling:
2 apples( red or green )
2 tablespoons coconut sugar
Preheat your oven to 180.
In your mixing bowl add in all the dry ingredients for the pastry.
Mix and add in the wet ingredients.
Remove from your bowl and flour the surface of your counter. Knead the mixture for just a minute.
Spray your little dishes or medium size dish.
Save 1/3 of the pastry for the top and use the rest to flatten out and make the crust of the dish.
Place in the oven to bake for 8-10 minutes while you chop up your fruit and sprinkle it with the sugar.
Roll out your remaining pastry and slice it into strips or use a pretty cookie cutter to cut out shapes to place on top.
Remove your slightly baked crusts from the oven and fill them with the fruit and sugar mix.
Cover with your remaining pastry and bake for 15-20 minutes until slightly golden.
Dust with icing sugar and serve with some coconut cream 🍃
