Apricot Jam Biscuits!
This could be my new favorite biscuit recipe ❤.
I love these so much I’ve made them twice is less than 24 hours
2 cups of all flour
2/3 cup of brown sugar
Pinch of salt
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 cup coconut oil
1 teaspoon vanilla extract
1/2 cup of apricot jam
Preheat your oven to 180C°.
Add all your dry ingredients to a bowl a mix.
In the microwave heat your jam up slightly until it becomes runnier.
Add the wet ingredients to the dry ingredient mix. Combine the two mixtures.
Using about 1 tablespoon of the dough, roll a ball and place it on the oiled baking tray. Repeat with the remaining dough.
Using a fork press down on the balls until they are slightly flattened.
Bake in the oven for 15 to 20 minutes.
