Baked Blueberry Squares with Tahini Lemon Drizzle🍃
These are so delicious and make for the perfect tea time snack 🌿Here’s the recipe:
Dry ingredients:
1 1/2 cups of cake flour
2/3 cup of coconut sugar
Pinch of salt
1 1/2 teaspoons of baking powder
1 cup fresh blueberries
Wet ingredients:
1 cup plant-based milk
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
1/2 cup melted coconut oil
Directions:
Preheat your oven to 180.
Mix together all your dry ingredients.
Add in the wet ingredients and combine the mixtures.
Pour into your oiled baking dish and bake for 28-30 minutes.
While the squares are baking you can make your tahini drizzle.
You will need:
2 tablespoons tahini (I used @ohmega_nutbutters )
2-3 tablespoons of liquid sweetener such as maple syrup/agave
2 -3 tablespoons of lemon juice
2-3 tablespoons of plant-based milk
Mid together all the ingredients and adjust the sweetness to your taste.
Drizzle over the squares once they have cooled down and enjoy 🌱
