Banana and Peanut Butter Muffins



These Banana and Peanut Butter Muffins were so quick and easy to make. They don't require any prep and are made using all pantry staples.


You will need:

  • Mixing bowl

  • Muffin tin

  • Measuring cups and spoons

  • Makes 9-12 small muffins or 6 jumbo muffins

  • Time 35 minutes total


Ingredients:

Dry:

  • 1& 1/2 cups of all-purpose flour

  • 1/2 cup of brown sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon of cinnamon

  • 1/2 teaspoon mixed spice

  • 1/2 teaspoon of cloves

  • 1/2 teaspoon of ground ginger

  • 1/2 cup crushed walnuts

  • Pinch of salt

  • 1 tablespoon chia seeds

Wet

  • 2 bananas mashed

  • 3 tablespoons of peanut butter

  • 1 teaspoon vanilla extract

  • 2 teaspoon of lemon juice

  • 1 cup of plant-based milk


Topping:

1 Banana slices

1 Tablespoon of chia seeds for sprinkling on top.


Directions:

  1. Preheat your oven to 180c°.

  2. In your mixing bowl, mix all your dry ingredients.

  3. Add in the wet ingredients and combine.

  4. Pour evenly into your muffin tin.

  5. Top with the slices of banana and chia seeds and bake for 25-30 minutes or until a knife comes out clean when inserted.
