Banana, Carrot, and Apple Loaf

Banana carrot and apple loaf. This is so delicious and can be enjoyed as a breakfast or tea time treat!


Ingredients:

  • 1 1/2 cups of all-purpose flour

  • 1 large grated carrot

  • 1 apple diced

  • 1 teaspoon cinnamon

  • 2 teaspoon baking powder

  • Pinch of salt

  • 1/2 cup of mixed seeds and nuts


Wet:

  • 3 mashed ripe bananas

  • 1/4 cup of olive oil

  • 1/2 cup of date syrup or sweetener of your choice

  • 1 cup of plant-based milk

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon vanilla extract


Directions:

  1. Preheat your oven to 160°C.

  2. In your mixing bowl add in all the dry ingredients and mix.

  3. In a separate mixing bowl add in the bananas and mash. Add in the rest of the wet ingredients and mix.

  4. Add the wet mixture to your dry ingredients and combine.

  5. Pour into your baking dish and bake for 50 minutes or until a knife comes out clean when inserted.
