Vegan Bounty Easter Eggs


I had so much fun making these vegan “Easter eggs” yesterday I thought I quickly better get the recipe up.

These are really simple to make yet so tasty!


You will need:

  • Mixing bowl

  • Measuring cups and spoons

  • Total time 45 minutes

  • Makes about 6-8 eggs


For the coconut filling:

  • 1 cup desiccated coconut

  • 1/2 cup of coconut flour

  • 2 tablespoons coconut oil melted

  • 4 tablespoons water

  • 2 tablespoons of sweetener(maple syrup, agave, coconut syrup)

  • 1 teaspoon essence (vanilla or caramel)


Chocolate:

  • 1 tablespoon coconut oil melted

  • 2 tablespoon cocoa powder

  • 1 tablespoon sweetener

Directions:

  1. Start with the filling.

  2. Mix together all of your dry ingredients. Add in the wet ingredients and mix.

  3. Form an egg to whatever size you desire.

  4. Place the former eggs on a plate cover in wax wrap.

  5. Pop it in the freezer for 30 minutes.

  6. While your eggs are freezing start making your chocolate.

For the chocolate:

  1. Mix all the ingredients together until smooth.

  2. Once your eggs have finished setting, dip each one in the chocolate and place in the freezer to set for 5 more minutes and enjoy 🌱
