Carrot Muffins


I've made these carrot muffins using my staple pantry ingredients from Just About Refills. They have the most amazing baking Bundle.


Time: 30 minutes

Makes:9-12 muffins


Ingredients:

Dry:

  • 1 1/2 cups cake flour

  • 1/2 cup sugar

  • 2 teaspoons baking powder

  • Pinch of salt

  • 2 carrots grated

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon cloves


Wet:

  • 1/3 cup of oil of choice

  • 1 cup plant-based milk

  • 1 teaspoon vanilla essence


Directions:

  1. Preheat your oven to 180°C and line your muffin tin.

  2. In your mixing bowl, add all of your dry ingredients and mix.

  3. Add in the wet ingredients and combine.

  4. Scoop evenly into your muffin tray.

  5. Bake for 18-22 minutes.
