Couscous Salad

This salad is perfect on its own or it can be a great compliment to a braai or lunch/dinner.


Time: 15-20 minutes

Serves 2-4



Ingredients:

  • 1/2 cup couscous

  • 2/3 cup of boiling water

  • pinch of salt

  • 1 big handful of baby spinach

  • 1/3 cup of chopped spring onion

  • 1/3 cup of mint

  • 5 small tomatoes sliced


Tahini sauce:

  • 1 tablespoon of tahini

  • 1 teaspoon of sweetener

  • Salt to taste

  • 1/4 cup of water

  • Juice of half a lemon

Directions:

  1. Start with your couscous.

  2. Place it in a bowl and pour the boiling water over. Cover with a plate and allow to soften while you prepare the rest of your ingredients.

  3. Chop cup your spinach, spring onion, mint, and tomatoes.

  4. In a little jug or cup place all the ingredients for the tahini dressing and mix.

  5. In your salad serving dish spread out all your cut up veggies.

  6. Pour the couscous on top and drizzle your tahini dressing over or serve it on the side.
