Easy Homemade Vegan Rusks

This was my first real attempt at making rusks let alone vegan rusks but I was really pleasantly surprised at how easy they are to make. I made them yesterday and woke up early to quickly get some pictures before they were all gone.
I made these using all our pantry staples so there was no need to go to the shops 🌱

You will need:
Measuring cups and spoons
Mixing bowl
Baking tray
Prep 15 minutes
Baking and drying 3 1/2 hours
Makes about 20-25 rusks depending on how to slice them
Store in an airtight container

Dry ingredients:
3 cups all-purpose flour
1 cup oats
1 cup dates finely chopped( or sub raisins)
1 cup brown sugar
2 teaspoons baking soda
2/3 cup coconut flakes( or nuts and seeds)
Pinch of Salt
Pinch of Nutmeg
Pinch of mixed spice
Pinch of Cloves
Wet ingredients:
1/2 cup maple syrup (or maple-flavored syrup)
2 cups of water
2 tablespoons coconut oil melted
2 teaspoon essence (vanilla or caramel)

Directions:
Preheat your oven to 180°C.
Mix together all of the dry ingredients.
Add in the wet ingredients and mix until well combined.
Oil your baking tray and pour the mixture out.
Spread the mix evenly about 1cm thick.
Place in the oven to bake for 30 minutes.
Once they have finished baking, remove from the oven and slice them into your desired size( I did some big and some small)
Turn your oven all the way down to 80° and place the tray with the sliced rusks in to dry out for about 3 hours.
