This lemon cake is perfect with a cup of tea on almost any occasion.
You will need:
Measuring cups and spoons
Time 45 minutes
2 cups all-purpose flour
2 tablespoons cornflour
1 1/5 cups of brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla
1 cup water or plant-based milk
1/2 cup oil ( coconut or sunflower
1/2 lemon juice fresh
3 tablespoons lemon grind
Preheat oven to 180°C.
Add all your dry ingredients into your mixing bowl and combine.
Add in the wet ingredients and stir until everything is well mixed.
Pour the mixture into your oiled dish.
Pop in the oven to bake for 30-35 minutes
Once it has cooked remove and allow it to cool while you start your icing.
2 cups icing sugar
1/2 cup lemon juice
2 tablespoons plant-based milk
For your icing add everything into a bowl and mix.
Pour over your cake and enjoy
