Easy Lemon Pie


Easy Lemon Pie 🍋🍋🍋

If you feeling like something lemony then this is a perfect little treat to whip up!


Coconut crust:

  • 1 cup of desiccated coconut

  • 1 tablespoon of sweetener

  • 1 tablespoon lemon juice

  • 1 tablespoon plant-based milk

  • Zest from 1 small lemon



Filling:

  • 1 cup of plant-based milk such as coconut milk

  • 1 heaped tablespoon of cornflour

  • 2-3 tablespoons of sweetener

  • 1 teaspoon of vanilla extract

  • Juice of 1 lemon



Directions:

  1. In a little bowl mix together all your ingredients.

  2. Pour the mixture into your two little pie dishes and press down and spread out.

  3. Place in the fridge while you do the filling.

  4. In your pot pour in half the milk with the lemon juice and sweetener.

  5. Mix the remaining milk with the tablespoon of cornflour.

  6. Pour the milk and cornflour mix into your pot and stir through on medium to high heat until it thickens.

  7. Add the vanilla and remove from heat.

  8. Pour into your little pie dishes and place in the freezer to set for 30 minutes 🌱
