Easy Lentil Pasta Bake

This easy vegan lentil pasta bake is so delicious and it comes together in under 40 minutes plus you will have leftovers for the next meal or day.

Serves 4-6

Time: 45 minutes


  • 2 tablespoons of olive oil

  • 1 onion sliced

  • 1 teaspoon garlic

  • 1/2 teaspoon crushed chili

  • 1 tin of lentils

  • 1 onion chopped

  • 1 tin of tomato and onion mix

  • 1 cup baby spinach

  • 1 teaspoon dried spice mix

  • Salt and pepper to taste

  • 1/8 teaspoon of smoked paprika


  • Pasta 250g

Cheesy sauce:

  • 1 tin of coconut milk

  • 2 tablespoons of cornflour

  • 2 tablespoons of lemon juice

  • Salt and pepper to taste


Place your pasta on the stove to cook following the instructions on the packaging.

In your frying pan heat up your olive oil and sauté your onions.

Add in your garlic and chili and cook for another minute.

Add in the lentils, baby spinach, and all of the spices and cook for 2 minutes.

Finally, add in the tomato and onion mix.

Preheat your oven to 180.

Once your pasta has finished cooking drain and place back into the pot. Add in the lentil mix to the pot of pasta. Allow to stay warm on medium heat while you prepare your cheesy sauce.

In a saucepan add in 2/3 of the coconut milk. Heat up on the stove.

Add in your lemon juice and salt and pepper.

Mix the remaining coconut milk with your cornflour and add it to the saucepan once it has come to a boil. Reduce heat and continue to stir until the mixture thickens. Remove from heat.

Place your pasta lentil mix in the baking dish and spread the cheese sauce over.

Place in the oven to bake for 20-30 minutes until the cheesy sauce is slightly golden.
