This is such a delicious meal to make for weekdays and weekends. Its quick and fuss free!
1 cup of yellow moong
1 onion sliced
1 teaspoon of crushed garlic
1 tablespoon of curry pasta of your choice
2 tablespoons of lemon juice
Salt and pepper to taste
1 cup of coconut milk
1 1/2 cups of boiling water
Olive oil or vegetable stock for frying the onion
Slice up your onion and saute in a pot using olive oil or vegetable stock.
Place your rice on the stove to cook following the instructions.
Once onions have softened, add in your garlic and curry paste.
Cook for about 2-3 minutes, stirring every minute or so.
Add in your yellow lentils, coconut milk, boiling water, and salt and pepper.
Cover your pot with the lid and reduce the heat until the curry is at a simmer.
Cook for 25 minutes until the lentils are soft.
Add in your lemon juice and extra salt and pepper to taste.
Serve with rice, Rotties, and fresh coriander, and enjoy!
