Ginger Pancakes

These ginger pancakes are so easy to make and a bonus is most of the ingredients come from the eco baking bundle from Just About Refills .



Here is what you need:

Time: 20 minutes

Makes :6 Pancakes



Ingredients:

Dry:

  • 1 and 1/2 cups of cake flour

  • 2 teaspoons of baking powder

  • 3 teaspoons of brown sugar

  • Half teaspoon of ground ginger

  • Pinch of salt

Wet:

  • 1 cup water plus 3 tablespoons

  • 1 teaspoon neutral oil




Directions:

  1. In your mixing bowl add in all of the dry ingredients. Add in your wet and mix until

  2. you have a smooth batter.

  3. Add just a little oil to your frying pan (about 1/2 a teaspoon) and heat up at a medium

  4. to high heat.

  5. Scoop in 1/3 a cup of the batter and spread out slightly.

  6. Cook for about 1-2 minutes until bubbles form and start to pop.

  7. Flip and cook for about another minute.

  8. Repeat with the remaining batter

  9. Serve with vegan yogurt, coconut cream, candied nuts, and maple syrup.
