Gluten-free and refined sugar-free Christmas cake 🎄
Nobody should miss out on any treats this festive time so this cake is perfect for all 🌿
1 cup of gluten-free cake flour
1 cup of cake mix raisins
2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon mixed spice
1 teaspoon vanilla essence
250g pitted dates chopped
1 cup boiling water
1/2 cup oil of choice
Preheat your oven to 180.
In a bowl place your pitted dates and pour the cup of boiled water over them and allow them to sit while you prepare the rest of your ingredients.
In your mixing bowl add in all your dry ingredients.
Add in the remaining wet ingredients including the date and water mix.
Mix until combined.
Pour into your cake tin or baking dish and bake in the oven for 40-45 minutes 🎄
