Gluten-free Pumpkin Brownies

Gluten-free Pumpkin Brownies ๐ŸƒI just made these as a weekend treat and I canโ€™t wait to enjoy them with some ice cream ๐Ÿƒ


Ingredients:

Dry:

  • 1 cup of gluten-free flour

  • 1/2 cup of cocoa powder

  • 1 cup of coconut sugar or sub brown sugar

  • 50 g nuts chopped (I used almonds)

  • Pinch of salt

  • 2 teaspoons of baking powder

  • 1 teaspoon cinnamon



Wet:

  • 1 cup pumpkin steamed

  • 1/2 cup of coconut oil

  • 1/2 cup of plant-based milk

  • 2 teaspoon vanilla essence



Directions:

  1. Preheat your oven to 180.

  2. Steam your pumpkin until soft.

  3. Mix together all your dry ingredients.

  4. In a mixing bowl mash the pumpkin until smooth. You can also blend it if you like.

  5. Mix all your wet ingredients together with the pumpkin.

  6. Add the wet mixture to your dry ingredients and combine.

  7. Pour into your oiled baking dish and bake for 25 minutes.

  8. Enjoy with a good drizzle of nut butter
