Gluten-free Vegan Milktart and Banana muffins


These are fresh out of the oven and I’m enjoying one right now. The smell in the house is out of this world 🌿

Here’s the recipe:

Ingredients:

Dry

  • 1 & 2/3 cups of gluten-free cake flour

  • 1/2 cup of coconut sugar

  • 2 teaspoon baking powder

  • Pinch of salt

  • 1 teaspoon cinnamon

  • 1/2 teaspoon of nutmeg

  • 1 banana thinly sliced



Wet:

  • 1 cup of plant-based milk

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon vanilla extract

  • 1/2 cup of coconut oil



Directions:

  1. Preheat your oven to 180.

  2. In your mixing bowl add in all the dry ingredients.

  3. Measure out your cup of milk and mix in the teaspoon of ac vinegar and allow to sit for 1 minute to become buttermilk.

  4. Add in all the wet ingredients to your dry ingredients including the buttermilk.

  5. Oil your muffin dish and spoon the mixture evenly into the tray.

  6. Place in the oven to bake for 28-30 minutes and enjoy 🌿
