Lazy Vegan Cinnamon Rolls

These vegan cinnamon rolls are so quick and easy to make.


Ingredients for dough :


Dry:

  • 2 cups flour plus 1/4 cup to dusting

  • 1/2 cup of sugar

  • 2 teaspoons of yeast

  • Pinch of salt

  • 1/2 teaspoon of cinnamon

Wet:

  • 1/2 cup plus 1/3 cup of warm plant-based milk

  • 1 teaspoon vanilla essence




Sugar Paste:

  • 1/4 cup of coconut oil

  • 1/3 cup of sugar

  • 1/2 teaspoon mixed spice

  • 1/2 teaspoon of cinnamon

Icing:

  • 1 1/4 cup of icing sugar

  • 2 tablespoons of plant-based milk



Directions:

  1. Mix together all of your dry ingredients for your dough. Add in the wet ingredients and mix until a dough forms.

  2. Dust your kitchen counter with some flour and knead the dough for 5 minutes.

  3. Roll your dough out on the counter into a rectangle about 20-35cm.

  4. Now start with the sugar basting.

  5. Mix together all of the ingredients until you have a paste.

  6. Spread the paste evenly over your rolled-out rectangle.

  7. Now roll your rectangle into a long tight sausage.

  8. Slice the cinnamon rolls into spirals about 11-12 pieces and place them into your oiled banking dish.

  9. Cover and allow to rise for 25 minutes while you preheat your oven to 180.

  10. Once risen place in your oven to bake for 30 minutes.

  11. Once they have finished baking remove from the oven and allow the rolls to absorb all the remaining syrup.

  12. Once cooled drizzle with icing and enjoy!
