Lemon Malva Pudding
Easy Vegan Lemon Malva Pudding
1 1/2 cups of all purpose cake flour
1 cup of brown sugar
2 teaspoon of baking powder
Pinch of salt
zest of one lemon
1 cup of plant-based milk
1/3 cup of apricot jam
1/3 cup of melted coconut oil
Juice of one lemon
2 tablespoons coconut oil
2 tablespoons brown sugar
3 tablespoons coconut cream
1 tablespoon apricot jam
1 teaspoon vanilla essence
Preheat your oven to 180.
In your mixing bowl add all the dry ingredients and mix.
Add in the wet ingredients and combine until smooth.
Pour into your baking dish and bake for 35-40 minutes until slightly golden and a knife comes out clean when inserted.
Remove from oven and make your sauce.
Place your pot on the stove with all the ingredients except for the vanilla essence.
Bring to boil at a medium heat until the sugar has dissolved.
Add the vanilla essence.
Piece your malva pudding with a toothpick or thin knife a couple of times all over.
Pour the sauce over and allow the pudding to absorb the liquid.
Serve warm with coconut cream or ice cream and enjoy 🍃
