Mushroom butternut pie

Mushroom butternut pie 🥧 🍃if you looking for something delicious to make over the weekend then would highly suggest making this pie 🌿
For the crust:
3 cups of all-purpose flour
1 cup of olive oil
1/2 cup of water
1 teaspoon smoked paprika
Salt and pepper

Filling:
I onion sliced
1 Punnet of mushrooms sliced
500 g butternut steamed
1 tablespoon of fresh Rosemary
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 teaspoon of garlic
Olive oil for frying
Directions:
Preheat your oven to 180.
Place your butternut onto steam.
Start with making your pie crust.
Mix together all the dry ingredients.
Add in the wet ingredients and knead the mixture until a dough forms.
Dust your surface with some flour. Remove just over half the dough and roll it out to fit your pie dish.
Spread out evenly and poke a couple of holes with a fork.
Place in the oven to bake for 15 minutes.
While the bottom crust is cooking start with your filling.
Fry up the onions in the olive oil for about 2 minutes until soft.
Add the mushrooms and fry until cooked. Add the garlic and steamed butternut.
Add your spices and salt and pepper to taste.
Roll out the remaining pastry and cut it into slices the length of your pie dish.
Remove your pie crust from the oven and scoop the butternut and mushroom mix in and spread evenly.
Place your pastry slices on top and place the pie back in the oven to bake for about 25 minutes until slightly golden.

While your pie is baking you can make a quick gravy to go with it.
Ingredients:
1/2 an onion finely sliced
1 cup of soya milk
Salt and pepper to taste
1/2 teaspoon of garlic
2 tablespoons of cornflour

Directions:
Fry your onion in a little olive oil. Add the garlic and salt and pepper.
Pour in half a cup of the soya milk and bring to boil.
Mix the remaining milk with cornflour.
Add the cornflour mix to the boiling mixture in the pot and turn the heat off.
Serve with your pie and enjoy 🌱
