No-bake Peanut Butter Bars

These peanut butter energy bars are the perfect snack to prepare for the week or weekend.



  • 1 cup of oats

  • 1 cup of pitted dates loosely packed

  • 1 teaspoon vanilla

  • 1/2 cup of water

Second layer:

  • 2/3 cup of peanut butter

  • 2-3 tablespoons of sweetener

  • 1 teaspoon vanilla

  • 1/3 cup of coconut oil

Chocolate layer:

  • 1/2 cup of coconut oil

  • 3-4 tablespoons of sweetener

  • 2 tablespoons cocoa powder

  • 1 teaspoon vanilla

  • Dash of salt


  1. Start with your base layer. Place all the ingredients in the blender and blend until you have a dough-like consistency.

  2. Line your dish with wax wrap and place the mixture inside. Spread out evenly, pressing down the mixture.

  3. Place in the freezer while you start your second layer.

  4. Melt your coconut oil. Place all the ingredients for the second layer into the blender and blend until smooth and creamy.

  5. Pour the second layer on top of the base layer and spread out evenly. Place in the freezer while you prepare the last chocolate layer.

  6. Melt your coconut oil and place all the ingredients for the chocolate layer into your blender. Blend until combined.

  7. Pour the final layer of the bars in the dish and tilt the dish around the spread the chocolate evenly.

  8. Place in the freezer to set for about 45 minutes.

  9. Slice the bars into your desired size and store in a sealed container in the fridge or freezer.
