One Bowl Vegan Banana Bread-Refined Sugar-Free


If the year 2020 could be food I reckon it would be banana bread because I've made this so so many times already this year! Easy one-bowl vegan banana bread, refined sugar-free 🌱

Ingredients:

Dry

  • 4 ripe bananas

  • 1 1/2 cups of all-purpose flour

  • 2/3 cup of a sugar substitute such as coconut sugar, xylitol, etc

  • Pinch of salt

  • 2 tablespoons of cashews

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon of ginger ground

  • 1/2 teaspoon of nutmeg

  • 1/2 teaspoon of cloves

  • 1/2 cup of mixed raisins

  • 2 teaspoons baking powder



Wet:

  • 1/2 teaspoon of vanilla

  • 1/2 cup coconut oil

  • 1/2 cup of soya milk mixed with 1 teaspoon apple cider



Directions:

  1. Preheat your oven to 180 °C.

  2. Place all of your dry ingredients into a mixing bowl and mix.

  3. Mashup 3 of the 4 bananas.

  4. Add the wet ingredients including the mashed bananas into the mixing bowl and combine the wet and dry mixtures.

  5. Pour the mixture into your baking tin.

  6. Slice the leftover banana in half and place it on top of the mixture.

  7. Put the banana bread in the oven for 45-50 minutes. •
