Peach & Cherry Galette

This was my first attempt at making a galette and I loved creating this rustic French dessert. They are so easy to make them look beautiful. This little dessert is pretty much your choice of fruit wrapped in pastry and its soo good!

You will need:
measuring cups and spoons
mixing bowl
rolling pin
time:45 minutes
For the pastry:
Dry:
2 cups of all-purpose flour
1/4 cup sugar of choice
1/2 teaspoon of Cinnamon ground
Pinch of salt
1 teaspoon of baking powder
Wet:
1/2 cups of coconut oil melted
1/2 cup of cold plant-based milk
For the filling:
1 Tin of peaches
180g of cherries
1 tablespoon cornflour
3 tablespoons sugar
1 teaspoon vanilla extract
Topping:
1/2 a cup of nuts of your choice such as almonds of almond slithers.

Directions:
Preheat your oven to 180°C.
In your mixing bowl add in your dry ingredients for the pastry and mix. Add in the wet ingredients and mix. Once the mixture is combined, knead the pastry until it forms a dough that is easy to work with. Allow the dough to rest while you start with your filling.
Strain the juice from the peaches and take the pips out of your cherries.
Mix together your fruits with the cornflour and sugar. Add in the vanilla extract.
Roll out your pastry on a well-floured area into a large circle almost 30cm in length.
Pile the fruit mixture into the dough slightly leaving a hump of fruit it the center and leaving about 3 cm around the edge.
Fold the rim of the dough over the edge of the filling. Start to overlap the dough as you go around. Place the slithered almonds or nuts on the top brim of the galette.
Place the Galette onto your baking tray and bake for a good 30-35 minutes until golden brown.
Serve with a sprinkle of icing sugar, vegan ice cream, or coconut cream and enjoy.
