Pecan and Banana baked vegan doughnuts


These easy-baked doughnuts hit the spot. They are made using the baking bundle from Just About Refills.

The ingredients are so simple.


Time:30 minutes

Makes 6-8 doughnuts


Ingredients:

  • 1 1/2 cups cake flour

  • 2/3 cup brown sugar

  • 2 teaspoons baking powder

  • Pinch of salt

  • 50g of pecan nuts chopped


Wet:

  • 2 bananas

  • 1/3 cup coconut oil melted

  • 1 teaspoon vanilla essence

  • 1/2 cup plant-based milk


Icing:

  • 1 cup of icing sugar

  • 3-4 tablespoons of plant-based milk



Directions:

  1. Preheat your oven to 180 °C and spray your doughnut tray.

  2. In your mixing bowl add in all of your dry ingredients and mix.

  3. Add in the wet ingredients and combine.

  4. Evenly pour the batter into your doughnut pan.

  5. Place in the oven to bake for 20-22 minutes.

  6. Allow to cool.

  7. Mix together your icing ingredients.

  8. Dip the doughnuts in the icing and enjoy!
