Perfect Mothers Day Cake

This cake is made with just the right amount of sweetness for the sweetest people in our lives. This is a great way to show a little love and treat the people we love in our lives.
It's so quick and easy to make and just about flop proof.

You will need:
2 mixing bowls
2 cake tins Or 1 cake tin
Measuring cups and spoons
Time to bake 35 minutes
Dry:
2 cups of all-purpose flour
1 1/4 cup of brown sugar
2 teaspoons of baking powder
Pinch of salt
Wet:
1/2 cup of coconut oil or sunflower oil
1 cup of plant-based milk or just use water
1 teaspoon apple cider vinegar or lemon juice
1 teaspoon of vanilla extract
You will also need:
Apricot jam for in-between the cake layers.
Marzipan or fondant for the top(optional you can just sprinkle icing sugar instead

Directions:
Preheat your oven to 180°C.
In a mixing bowl cream the melted coconut oil and sugar.
Add in the rest of the wet ingredients and mix.
In a separate mixing bowl, mix together all the dry ingredients.
Add the wet and dry mixtures together and combine until well mixed.
Pour the mixture into your oiled cake tins or just one cake tin.
Place in the oven to bake for 30-35 minutes until a knife comes out clean when inserted.
Remove from the tins and allow to cool.
While the cake is cooling, roll out your fondant to the circumference of the top of your cake. I used the cake tin to measure.
Once your cakes have cooled, spread a good amount of apricot jam on the bottom layer of the cake. Place some extra fondant on top if you have any leftovers. Gently place the top layer onto the bottom layer that has just been covered with jam.
Once your cakes are stacked, place the fondant on the top of your cake and decorate however you like. If you don't have fondant not to worry this cake is just as good with a sprinkle of icing sugar.
