Potato and Chickpea stew 🌿


I’ve had a couple of request for some more lunch/dinner options so I thought I would share this quick stew that I’ve been making the past couple of weeks🌱

It serves about 4-6 depending on portion size and if you are having rice with it🌱

Ingredients

  • 1 large onion diced

  • 3 potatoes cubed

  • 1 large sweet potato sliced

  • 1 tin of chickpeas

  • 1 tin of coconut milk or sub for 250ml water and veg stock

  • 1 cup of boiling water

  • 1/2 a tin of chopped tomatoes


Spices:

  • 1 teaspoon smoked paprika

  • 1 teaspoon of fresh oregano

  • A dash of paprika

  • Salt and pepper to taste

  • 1 teaspoon of sweetener

  • Some oil for frying the onion



Directions:

  1. Start by frying the onions in a dash of olive oil.

  2. Once the onions have softened, add in the potatoes.

  3. Fry for another minute and add in the coconut milk and all the spices.

  4. Add in the cup of boiled water and bring it to boil.

  5. Once boiling, turn the stove down and add the pot lid on.

  6. Allow to cook for about 20 minutes until the potatoes are soft.

  7. Drain your chickpeas and rinse them off. Add them to your pot and stir through. Have a final taste and adjust with more salt and pepper or sweetener.

  8. Serve with your favorite rice and garnish with some fresh oregano. 🌿
