Raisin and Coconut Muffins

These Raisin and Coconut muffins are perfect for any breakfast or team time snack and can be a great addition to school lunches. They have a delicious crispy top with a soft inside. Quick and easy to make all you need is one bowl and 30 minutes and you are set!
You will need:
Muffin dish
Mixing bowl and measuring utensils
Time 30 minutes
Makes 12-18 muffins
You will need 30 minutes

Ingredients:
1 1/2 cups all purpose flour
1 cup desiccated coconut
1 cup raisins
1 1/2 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
2/3 cup of brown sugar
Dash cinnamon
Wet ingredients:
1/2 cup of coconut oil
1 teaspoons vanilla essence
1 teaspoons apple cider vinegar
1 cup water
Directions:
Preheat your oven to 180°C .
Mix together all of your dry ingredients.
Add in the wet ingredients and mix until well combined.
Scoop the mixture evenly into each muffin dish.
Sprinkle the top with some cinnamon and sugar.
Place in the oven to bake for about 25 minutes.
